The temperatures have plummeted, as my dad would ask, “what is it 20 degrees?”
Well it is probably a bit lower than that, mid teens but the wind chill makes it worse. So with the cold weather comes food that warms the soul.
I like a massaman curry, I have made it many different ways but this is the easiest, just so simple and delicious.

So these are the ingredients needed for my take on a massaman curry.

First off it is simple, about 300ml of coconut milk into a pot.

Then you add two tablespoons of yellow curry paste and simmer until it blends into the coconut milk. Then add your meat, it can be beef or chicken, whatever takes your fancy. Also add 4 or 5 tablespoons of fish sauce, about 5 tables spoons of sugar and a tablespoon of salt. Add about 400mls of water and cook for 30 minutes.

Add your potatoes; I cut up about 3 or 4 medium sized ones.

You can also add mushrooms or anything else you might like, up to you. Then cook for another 30 minutes. Keep a little water handy just in case you need it.

Here it is nearly ready; it has been on a slow simmer for an hour in total.

Then I add some fresh coriander and it is time to eat. I actually like it a day later, the flavour is even better then.

Served with fresh steaming rice is perfect on a cool Isaan night.

And my two girls were watching TV.
Tonight as I type this I am sitting with tracksuit pants, jumper and socks on and I am thinking about putting my beanie on, a little chilly again.
